These Belgian waffles have a hint of cinnamon and vanilla, which goes very well with a fruit topping.
In a medium mixing bowl, combine:
2 egg yolks (save the whites)
1 teaspoon vanilla extract
1 cup buttermilk
1/4 cup butter, melted (butter, not margarine)
In a large mixing bowl, combine:
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 tablespoon white sugar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
Pour the milk and egg mixture into the large bowl, mix thoroughly.
In a small mixing bowl, beat the egg whites with an electric mixer until stiff.
Fold into the large bowl
Pour batter into Belgian waffle iron until bottom squares are covered. Cook
until golden brown.
Serve with butter, or top with sliced strawberries or cherries and whip cream.
