Punkin waffles
My wife always corrects me, it's "pumpkin". I say "punkin" just for fun.
These are great in the fall.
In a large mixing bowl, combine:
1 cup whole wheat flour
1/4 cup wheat germ
1/3 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
In a small mixing bowl, combine:
3/4 cup milk
1/2 cup pumpkin puree
2 tablespoons melted butter (use butter, not margarine)
2 tablespoons cooking oil
1/2 cup applesauce
1 egg
1 egg white
1/2 cup chopped pecans
Add the contents of the small bowl into the large bowl, mix thoroughly.
Use 2/3 cup in a 7" waffle.
