Whole grains make these waffles appeal to the health nuts in your group.
- In a small mixing bowl, whisk together:
- 2 eggs, beaten
- 1 3/4 cups skim milk
- 1/4 cup canola oil
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
- In a large mixing bowl, combine:
- 1 cup whole wheat pastry flour
- 1/2 cup flax seed meal
- 1/4 cup wheat germ or oatmeal
- 1/4 cup all-purpose flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1/4 teaspoon salt
- Add the contents of the small bowl to the large bowl, beat until thoroughly mixed.
- Preheat a waffle iron, and coat with cooking spray. Use 2/3 cup in a 7" round
- waffle iron, and cook until crisp and golden brown.
