Not an Eggo, but a nice, egg flavor in these waffles.
In a large mixing bowl, mix:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons white sugar
In a small mixing bowl, beat together:
4 egg yolks (save the whites)
1 1/4 cups milk
1/2 cup vegetable oil
Mix the milk and yolk mixture into the large bowl.
Beat until stiff:
4 egg whites
Fold into the large bowl. Use 2/3 cup batter in 7" round waffle iron.
